SteakingOut started as a simple idea ... document barbecue, smoke, fire, road trips, backyard experiments, restaurants, festivals, and the people who make this food worth chasing.

The name is a joke and also the whole point.

Sometimes staking out barbecue means visiting a famous smokehouse. Sometimes it means standing outside in bad weather trying to keep a smoker alive long enough to finish dinner. Sometimes it means turning a regular gas grill into a smoker with foil and stubborn optimism.

This site is not here to be fancy.

It is here for real smoke, real food, real places, real cooks, and the stories that happen around fire.
